  • 4 eggs ( room temperature)
  • 2 tbs soy sauce
  • 2 tbs sugar
  • 1 tbsp miso
  • 1 tbs mirin
  • 2 tsp honey
  • 1/4 tsp Tobanjyan Chinese broad bean chilli paste
  • 1 clove garlic crushed

Step 1. Boil the water in a large saucepan and once it is boil, add the eggs gently one by one into the boiling water using a ladle.

Step 2. Set the timer for 7 minutes. While waiting for the eggs getting boiled, prepare the marinade sauce by combining all of the ingredients except the miso in a small saucepan over medium heat.

Step 3. Right before the sauce getting boil, turn the heat off. Then, add the miso paste and dissolve it and cool the sauce down.

Step 4. After the eggs soft-boiled, transfer them immediately to stop them from the cooking process. Then peel off the eggs and marinate them in the cool down sauce in a ziplock bag. Rest it in the fridge for about 5 hours before serving it. Enjoy!
