INGREDIENTS

  • 1 pound beef short ribs
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, sliced
  • 1 clove garlic
  • 1 (12 fluid ounce) can or bottle stout beer
  • 1 cup beef stock

INSTRUCTIONS


Step 1. Season the short ribs with salt and pepper before dredging them in flour. Remove any excess flour by shaking it off.


Step 2. In a large skillet or Dutch oven, heat the olive oil and butter over medium-high heat. Cook the ribs for 5 minutes on each side or until browned. 


Step 3. Remove from the skillet and set it aside. Cook and stir the onion and garlic in the skillet for about 5 minutes or until the onion is tender. Pour the beer into the skillet with the ribs.

  • 1 teaspoon smoked paprika

  • 2 pounds English-cut short ribs
  • 2 tablespoons barbecue sauce, or to taste

INSTRUCTIONS


Step 1. To make the rub, add the brown sugar, garlic powder, chili powder, paprika, cumin, and salt in a small cup. Mix in the oil until you have a crumbly paste. Rub the spice mixture all over the ribs and set aside to rest for 1–2 hours at room temperature or up to overnight in the refrigerator. Bring the ribs to room temperature before cooking if refrigerated.


Step 2. Preheat the oven to 121°C with the oven rack in the center spot. Arrange the ribs in a single layer on an aluminum foil-lined baking sheet. Cover the ribs with another layer of foil and crimp the foil sheets together to form a packet. 


Step 3. Bake for 3 hours, then check the ribs: they should be tender, and the internal temperature should be 95°C at the thickest section. Bake for another 30-60 minutes if they aren't done.


Step 4. Remove the ribs from the oven when they are tender and preheat the broiler. Return the ribs to the oven and broil for 5 minutes or until crisp on the bottom. Wash the ribs gently with barbecue sauce using a pastry brush.

  • 4 pounds beef ribs
  • For Marinade:
  • 1/2 cup dry red wine
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • 2 to 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Optional: 2 tablespoons barbecue sauce

Step 1. Gather the ingredients.


Step 2. In a medium bowl, combine marinade ingredients. Mix well.
