  • 2 pounds fresh shelled purple hull peas
  • 1 1/2 cups water
  • 1 tsp onion powder for each pound of peas
  • 1 tsp garlic powder for each pound of peas
  • 1/2 tsp table salt for each pound of peas
  • Fresh ground pepper

Instructions:

Step 1. Put all of the ingredients in a pressure cooker. You have to make sure not to fill the pot more than 2/3 full. Then, lock the lid, put on the pressure regulator, and put it over medium-high heat.

Step 2. When it is starting to chatter, reduce the heat to medium-low and set the timer for 4 minutes.

Step 3. Once it is done, remove the cooker from the heat and let it cool down for about 20 minutes. Let all of the pressure gone naturally before you open the lid. Your special treat is ready to serve. Enjoy!

Ingredients:

  • 1 pound dried black-eyed peas
  • 4 strips smoked bacon, diced
  • 1/2 onion, diced
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 6 cups chicken stock
  • 3 bay leaves
  • Kosher salt

Instructions:

Step 1. Rinse and sort the beans under the cool water. Then, soak it in a large container with enough water overnight. Drain the beans the next morning before you cook it. Set aside.

Step 2. In a large pot, add the bacon, onion, black pepper, and garlic powder over medium heat. Let it cooked until the onion getting translucent and softened, it may take 10 minutes.

Step 3. Once it is done, add the drained beans, chicken stock, and bay leaves into the pot. Let it boil and once it is boiled, reduce the heat to simmer. While it is simmer, skimming any impurities that rise to the surface until the bean tender for about 1 hour.

  • 1 pound dry black-eyed peas
  • 32 oz box chicken broth
  • 14 oz can petite diced tomatoes
  • 1 cup diced ham
  • 1/2 onion diced
  • 1 teaspoon minced garlic
  • 1/2 tsp pepper

Instructions:

Step 1. Soak the dry black-eyed peas overnight. Then, the next morning, drain the water before you cook it.

Step 2. Add the chicken broth, can of diced tomatoes, ham, onion, garlic, and pepper. Stir all of the ingredients to make sure that everything is blended.

Step 3. Cover the crockpot and cook on low for 10 hours or high for 6 hours. Do not open the lid during the cooking time.

Step 4. Voila! Your black-eyed peas are ready to serve!

How to Cook Black Eyed Peas Southern Style

Ingredients:

  • 2 cups black-eyed peas dry
  • 8 oz bacon chopped into bits
  • 1 cup white onions diced
  • 1 tsp garlic minced
  • 4 cups chicken broth
  • 1 bay leaf
  • 1/4 tsp red pepper flakes
  • smoked salt & black pepper to taste

Instructions:

Step 1. Rinse the peas thoroughly under the cool water and take out some bad peas. Then, place the clean peas in a bowl and cover it with water. Soaked the peas for at least 6 hours up to overnight.

Step 2. Drain and rinse the soaked peas. Set it aside. 

Step 3. Cook the bacon in a large skillet over medium heat until it becomes crispy. Once it is getting crispy, drain the bacon on paper towels while leaving about 2 tsp of bacon fat in the skillet pan. Then, chop the bacon into small pieces. Set aside.

Step 4. Cook the onion in the previous pan until it becomes transparent. Then, add the garlic and continue to cook until it becomes fragrant.

Step 5. In a separate large pot, bring to boil soaked peas, onions, garlic, chicken broth, bay leaf, and red pepper flakes. Once it is boiled, reduce the heat to simmer until the peas are getting tender about 25 minutes.

Step 6. When the peas are getting tender, add the smoked salt and black pepper based on your preference. Then, add the bacon on top of that to keep it crispy. Serve it hot!
