Fresh spinach is the best condition if you want to get all the nutrition inside. So, below is a step-by-step guideline on how to cook spinach in fresh condition.

Ingredients:

  • 2 tbsp olive oil

  • 16 oz fresh spinach

  • 3 garlic cloves

  • 1/4 whole lemon

  • 2 tbsp lemon zest or peel

  • Salt and cracked pepper

Instructions:

Step 1: Wash your spinach in running fresh water.

Step 2. Take the cloves and mince them. Make sure it's not too big or small.

Step 3. Use medium heat to heat olive oil in a skillet and add the minced fresh garlic when the oil is hot.

Step 4. Saute the garlic and constantly stir it for about 1 minute to release the flavor and keep the garlic from burning.

Step 5. Add spinach, but don't put it all at once. Cook and stir it constantly on medium-high heat for only 1 minute without a lid until the leaves start to wilt.

Step 6. Remove the spinach from heat and cover it for 2-3 minutes.

Step 7. Open the lid, then add fresh lemon juice by squeezing it as much as you like, and stir. Do not use bottled lemon juice (it's too acidic).

Step 8. Pour a pinch of salt, if needed (about 1/8 teaspoon), and fresh cracked pepper as much as you want. Don't forget to top it with lemon zest to make it fresher.

Step 9. Serve it and enjoy your delicious sauteed spinach.

Ingredients:

  • 1/2 lb. penne pasta

  • 1 yellow onion

  • 2 cloves garlic

  • 1 Tbsp olive oil

  • 1 15oz. can diced tomatoes

  • 1/2 tsp dried oregano

  • 1/2 tsp dried basil

  • 1 pinch crushed red pepper (optional)

  • 1/2 tsp salt

  • freshly cracked black pepper to taste

  • 2 Tbsp tomato paste

  • 2 oz. cream cheese

  • 1/4 cup grated Parmesan

  • 4 oz. fresh spinach

Instructions:

Step 1. Wash your spinach in running fresh water.

Step 2. Boil the water on high heat, then put the pasta. Wait for 7-10 minutes until tender.

Step 3. Meanwhile, waiting for the water to boil, you can add the onion, garlic, and olive oil to a large skillet on the other stovetop.

Step 4. Sauté them over medium heat until the onions are soft and translucent (3-5 minutes).

Step 5. Add the diced tomatoes (with juices), oregano, basil, crushed red pepper, salt, and some cracked pepper to the skillet. Stir to combine.

Step 6. Add the tomato paste and a 1/2 cup of water to the skillet and stir it until the tomato paste has mixed into the sauce.

Step 7. Drain the pasta after it becomes tender, the put it on a plate

Step 8. Turn the heat down to low.

Step 9. Cut the cream cheese or grate it into a few pieces, then add them to the skillet with the tomato sauce and stir it.

Step 10. Add the Parmesan to the skillet and stir until it is melted into the sauce.

Step 11. Add also the fresh spinach to the skillet and gently stir until it has wilted (2-3 minutes).

Step 12. Put the drained pasta with the sauce and stir until it is well coated in the creamy tomato sauce.
