  • 8 bags of black tea or 3 tablespoons loose-leaf black tea
  • 4 cups hot water
  • 3/4 cup quick-cooking tapioca pearls
  • whole milk to serve (or your choice of milk)
  • simple syrup to serve (or your choice of sweetener)

For the simple syrups:

  • 1/2 cup water
  • 1/2 cup sugar


Step 1: Prepare tea bags or leaves with 4 cups of freshly boiled water. 

Step 2: Prepare the simple syrups in case you use them. Then, add the water and sugar to a saucepan and stir them quickly. 

Step 3: Cook the tapioca pearls with 4 cups of water and add the tapioca pearls. After that, stir the pearls and wait for them to float. Cook them for around 5 minutes. 

Step 4: Assemble the drinks and strain the tea into a pitcher. Then, divide the cooked tapioca pearls into 4 large glasses. Add ice cubes to the glass. Then, pour 1 cup of the tea into each glass, and don't forget to add 1 1/2 tablespoons of milk, including 1 1/2 tablespoons of syrup, into each glass. Stir and taste the milk tea.

1. Brown Sugar Boba Pearls

  • 1 cup tapioca flour
  • ⅓ cup water
  • ½ cup brown sugar

2. Brown Sugar Syrup 

  • 2 cups brown sugar
  • 2 cups water for boiling

3. To Serve

  • 4 cups fresh milk, preferably cold
  • ice cubes optional


Brown Sugar Boba Pearl

Step 1: Combine the water and brown sugar in a pan. Stew over low warmth until dissolved. 

Step 2: Add 1 tablespoon of tapioca flour and mix until completely joined. 

Step 3: Turn off heat, then add the tapioca flour. Mix until the mixture is shaped. 

Step 4: Move to a level surface and massage until smooth. Place a plastic foil on top of the batter. Smooth using a rolling pin to around 1 cm thick, then cut into little squares. 

Step 5: Roll the pieces into little balls, then place them in a bowl with 1 tablespoon of tapioca flour. Shake the bowl lightly to make sure the pearls are covered with flour and not staying together.

Brown Sugar Syrup

  • Pour the Boba pearls into boiling water and leave for 10 minutes. Stir occasionally.
  • Add 2 cups of brown sugar and stir. Please leave it to boil for another 5 minutes.

To Serve

  • Divide the syrup and boba pearls into 4 tall glasses. Tip the glass aside and slowly roll until the sides are totally covered with syrup.

Step 1: Boil the water in a tea kettle over medium to medium-high heat, allowing it to reach a boil.

Step 2: Place the tea bags in a large mug. 

Step 3: The tea should steep for around 2 minutes, except if the directions on your brand of tea specifically state in any case.
