Step 1. Make an X pattern on the flat side of the chestnut with a paring or serrated knife.

Step 2. Prepare the hot lump charcoal or a good bed of hot embers in an open log fire pit. Set up your iron pan on the grill. Make sure the handle is outside the pit.

  • A baking pan

  • The chestnuts

  • Water

Step 1. Preheat the oven, about 425 °F to separate chestnuts from their bark. Make sure to put the rack in the center of the oven.
