INGREDIENTS
- 4 pounds boneless beef short ribs
- 1 tsp kosher salt
- 1 tsp black pepper
- 2 cups ketchup
- 2 Tbl liquid smoke
- 1/2–2/3 cup brown sugar
- 1/2 cup minced onion
- 1 tsp garlic powder
- 3/4 cup Bacon BBQ Sauce or any BBQ sauce
- 2 Tbl cornstarch
- 2 Tbl water
INSTRUCTIONS
Step 1. Preheat the oven to 148 °C and place a rack in the middle. Combine the ketchup, liquid smoke, brown sugar, minced onion, garlic powder, and bacon bbq sauce in a medium saucepan over medium heat and stir to combine. Cook, stirring regularly until the sauce is rich and bubbly. About ten minutes.
Step 2. Season the short ribs with salt and pepper all over. In a 13x9-inch glass baking dish, combine all of the ingredients. This is going to be a tight situation. Over the short ribs, pour around 1/2 cup of the sauce.
Step 3. Turn the ribs over with tongs and spoon another 1/2 cup of sauce on top. Hold the leftover BBQ sauce to spoon over the ribs until they've been fried. Roast for 2 1/2 hours with the skillet covered with foil.
Step 4. Carefully remove the foil and turn the short ribs. More sauce can be spooned on top. Cook for an additional 30 minutes, uncovered until the beef is juicy and browned. Check the ribs every 10-15 minutes to make sure they're still wrapped in sauce, and the pan hasn't dried out.
Step 5. Arrange the short ribs on a platter to serve. Use some of the reserved BBQ sauce to baste the short ribs. Load the juices into a medium saucepan, discarding the fat and oil. Bring to a boil with around 1/4 cup bbq sauce. To thicken the liquid, make a slurry of cornstarch and water and whisk it into it.
