How to Make Homemade Nachos Cheese

Ingredients:

  • 2 tbsp unsalted butter
  • 1 clove garlic, grated
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 8 oz. sharp cheddar cheese, shredded
  • 1/2 tsp chipotle chili powder

Instructions:

Step 1. Firstly, melt the butter in a small saucepan over medium heat. When all of the butter is melted, toss in the grated garlic and let it cook for 1 minute.

Step 2. After that, whisk in the flour and let cook for another 1 minute. Then, add in the milk and keep stirring the mixture until it becomes thick.

Step 3. Once the mixture gets thicken, add the shredded cheese and keep stirring with the whisk until the cheese is melted and the sauce becomes smooth.

Step 4. Lastly, add the chipotle chili powder. Remove from the heat and our homemade nachos cheese is ready to complete your favorite nachos!

How to Make Nachos in the Oven

Ingredients:

  • 1 bag tortilla chips large
  • 1 lb ground beef pot roast or pulled pork.
  • 1 15 oz can refried beans
  • 2 c cheddar cheese

Instructions:

Step 1. Preheat the oven until it reaches 350 degrees. Set aside.

Step 2. Line a baking sheet with aluminum foil and spread over tortilla chips to the baking sheet without overlapping. Set aside.

Step 3. Heat refried beans in a microwave or stovetop and place 1 tbsp of it per chips individually. Then, top it with ground beef pot roast or pulled pork on each chip.

Step 4. After that, sprinkle with 1/2 of the cheese on each chip and add another layer of chips and repeat with toppings again.

Step 5. Once everything is set, bake the nachos in the preheated oven until all the cheese is melted. It may take about 10 minutes. 

Step 6. When it is done, remove from the oven and top with chopped tomatoes, sliced olives, sour cream, and avocado. Serve it warmly!

How to Make Chicken Nachos

Ingredients:

  • 15-ounce can black beans
  • 2.25-ounce can slice black olives
  • 12 ounces sharp cheddar
  • 1 small tomato
  • 8 medium scallions
  • 1 small jalapeño
  • 1 pound rotisserie chicken meat (from a 4 to 5-pound chicken)
  • 1/2 cup salsa
  • 16-ounce bag restaurant-style tortilla chips

Instructions:

Step 1. Preheat the oven until reaches 425 degrees and arrange a rack in the middle of it. Then, line a rimmed baking sheet with aluminum foil and set it aside.

Step 2. While waiting for the oven to reach the heat, prepare the toppings and keep them separate. Rinse and drain the black beans. Drain the sliced black olives and grate the sharp cheddar on the large holes of a box grater. Then, chop 1 tomato and thinly slice 8 scallions along with 1 small jalapeno.

Step 3. In a separate bowl, shred 1 pound cooked chicken and toss it with 1/2 cup salsa.

Step 4. Once all of the toppings are ready, it's time to arrange the nachos. Spread over about half of a bag of tortilla chips on the baking sheet in an even layer. Then, topped with half of the seasoned chicken and a handful of shredded cheese. Layer the remaining chips on top and followed by the remaining chicken and cheese. Lastly, sprinkle with the black beans.

Step 5. Once the nachos are assembled, let it baked until the cheese melted and the chips around the edges are beginning to brown. It may take about 8 minutes. 

Step 6. Put some garnish like tomato, black olives, jalapeno, and do not forget to serve it along with the homemade nachos cheese as the dipping sauce. Enjoy!
