Ingredients

  • 2 ripe fresh mangoes, diced
  • 1 cup light coconut milk
  • 2 tablespoons of white sugar
  • 2 tablespoons of cornstarch
  • 3 egg, use only the yolks
  • 1/4 cup of fresh mint leaves (for serving)

Instructions :

Step 1. Prepare all of the ingredients for the mango custard. Peel of and dice cubed the mango. Set two cubes of the slices for serving in a fridge.

Step 2. Transfer the remaining slices into a blender and process the blending until smooth.

Step 3. Turn off the blender and add the sugar. Blend again to mix. Turn off and set aside.

Step 4. In a small bowl, pour 1/4 cup of coconut milk and sit in cornstarch until dissolved.

Step 5. In the blender with mango puree, add the cornstarch mix and also the egg yolks.

Step 6. Blend for another 10 seconds. Set aside.

Step 7. In a pot, pour the 3/4 cup of the remaining coconut milk. HEat over medium heat. Stir continually until a light boil.  

Step 8. Turn off the heat and transfer to the blender with your mango puree. Blend immediately for 5 seconds to combine.

Step 9. Now pour all of the blends into a pot over medium-high heat. Stir continually until thickened. Reduce the heat to medium. Check the tase. You can add more sugar if you think it's needed.

Step 10. Pour into a serving bowl or glass. Put into the refrigerator to let it chill.

Step 11. Garnish with the reserved mango cubes and fresh mint before serving.

2. Vegan Mango Dessert Recipes (Vegan Mango Mousse)

Ingredients

  • 3 ripe mangoes, sliced to cubes
  • 1 1/2 cups of coconut cream
  • 2 tablespoons of powdered sugar3

Instructions

Step 1. Prepare all of the ingredients for the mango custard. Peel of and dice cubed the mango.

Step 2. Use a hand mixer to mash the dices into a smooth puree in a bowl.

Step 3. Add the coconut cream to the bowl. Whisk the puree until creamy.

Step 4. Add the powdered sugar in. Check the taste and adjust to your preference. You can add more sugar if needed.

Step 5. Your mango mousse is ready. You can garnish it with some mango cubes or other fruit to serve. Refrigerate for a few hours to enjoy the best refreshing sensation.

Ingredients

  • 2 cups of plain greek yogurt
  • 1/2 cup mango puree
  • 2 tablespoons sugar or to taste
  • 3 cardamom
  • Pinch saffron strands, dissolved in water
  • Cashews to garnish (optional)

Instructions

Step 1. Prepare all of the ingredients for the mango custard. Peel of and dice cubed the mango.

Step 2. In a medium bowl, pour, and whisk greek sugar well. Set aside.

Step 3. Pour in the chop mangoes and blend until smooth.

Step 4. Now on a flat surface, smash the peeled cardamom's seeds with a mortar and pestle.

Step 5. Pour and mix greek yogurt and sugar. Pour the mango puree as well and whisk until the sugar dissolved.  

Step 6. Add the cardamom seeds and milk-dissolved pinch saffron strands. Mix well.

Step 7. In serving bowls or glasses, pour the mixture.

Step 8. Garnish with some cashews before serving. Refrigerate for an hour to enjoy the best.
