  • 1 ½ cups butter
  • 3 cups of sugar

  • 5 eggs

  • 2 cups powdered sugar

Instructions:

Step 1. Preheat the oven until it reaches 325 °F.

Step 2. While waiting for the oven to reach the heat, mix the cream, butter, and sugar in a bowl. Add the lemon and vanilla extract over it. Once it is well mixed, add the eggs while keep mixing. Then, add the flour and salt until everything is combined. After that, add the 7Up and mix it for a minute.

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • ¾ cup unsalted butter
  • 1 ½ cups ricotta cheese
  • 1 ½ cups granulated sugar
  • 3 pcs large eggs
  • 1 tsp vanilla extract
  • 1 tsp Meyer lemon zest
  • 2 tbsp Meyer lemon juice

Instructions:

Step 1. Preheat the oven until it reaches 350 °F and line the loaf pan with parchment paper and sprayed with cooking spray thoroughly. Set aside.

Step 2. While waiting for the oven to reach the heat, mix the flour, baking powder, and salt in a bowl. Set aside.

Step 3. Beat the unsalted butter, ricotta cheese, and sugar using a mixer in medium-high speed until it becomes inseparable. It may take 3 minutes until the mixture becomes fluffy. Then, turn down the speed into low and add the eggs, vanilla, lemon zest, and lemon juice. Keep mixing.

  • 2 large eggs
  • 2 cups all-purpose flour
  • ¾ tsp salt
  • ½ tsp baking powder
  • ½ cup and 4 tbsp whole milk
  • 2 tsp lemon zest
  • 1 tsp lemon extract
  • ½ cup confectioners’ sugar

Instructions:

Step 1. Preheat the oven until it reaches 325 °F and sprays a loaf pan with cooking spray. Set aside.

Step 2. Beat the butter, and granulated sugar in a stand mixer at medium speed for about 3 minutes. Add the eggs, one by one, and beat one after another. Set aside.

Step 3. Whisk the flour, salt, and baking powder in a bowl and set it aside. In a separate bowl, mix the milk, lemon zest, and lemon extract until combine.

  • 2 tsp Lemon Extract
  • 2 cups All-Purpose Flour
  • 3 tsp Baking Powder
  • ½ tsp Salt
  • 1 cup Vegan Buttermilk
  • 2 tbsp Lemon Zest
  • For the Lemon Glaze:
  • 1 cup Powdered Sugar
  • 1 and ½ tbsp Lemon Juice
  • 1/8 tsp Lemon Extract

Instructions:

Step 1. Preheat the oven until it reaches 350 °F and line the loaf pan with parchment paper and sprayed with cooking spray thoroughly. Set aside.

Step 2. Using a mixer, mix the vegan butter along with white sugar until it's creamed. Then, add the vanilla extract and lemon extract into the mixture. Set aside.

Step 3. In a separate bowl, mix the flour, baking powder, and salt until it becomes inseparable. Set aside.

Step 4. Combine the wet and dry mixture until it well-mixed. After that, mix the lemon juice and soy milk until it becomes one. Add the milk mixture to the flour batter with a spoon slowly, do not overmix. Then, add the lemon zest and the batter will become thick.

Step 5. Pour the well-mixed batter into the prepared loaf pan and let it bake for an hour. Once it is done, place it ina wire rack to cool the cake down.
