1. Thai Coconut Rice Recipes

Ingredients:

  • 1 cup of jasmine rice
  • 1 can of coconut milk
  • ¼ cup of water
  • ½ tsp of sugar
  • ½ tsp of salt
  • ½ tsp of red pepper flakes
  • 1/8 tsp of turmeric
  • 1 tsp of fresh ginger, finely minced

Instructions:

Step 1. In a saucepan, combine the jasmine rice, coconut milk, water, sugar, salt, pepper flakes, and turmeric. Stir the mixture until well-combined.

Step 2. Cook over medium-high heat. Stir the mixture until bubbly then reduce the heat to low.

Step 3. Cover the saucepan and cook for 18 minutes.

Step 4. Turn off the heat and stir the rice with a fork. Cover again and let sit for 5 more minutes.

Step 5. Transfer to a plate and serve. Dig in!


2. Caribbean Coconut Rice Recipes

Ingredients:

  • 1 cup of jasmine rice
  • ¾ cup of coconut milk
  • 2 tsp of unsalted butter
  • 2 tsp of ginger
  • 2 cinnamon stick
  • 1 clove of garlic
  • 1 tsp of sugar
  • ½ tsp of salt
  • 1/8 tsp of white pepper powder
  • ¼ tsp of lime zest

Instructions:

Step 1. In a saucepan, melt the butter over medium heat. Once the butter is melted, add the ginger, garlic, and cinnamon stick. Cook for one minute.

Step 2. After that, add the rice and saute for a few seconds.

Step 3. Next, add the coconut milk, salt, sugar, pepper, lime zest, and water. Cook until bubbly and stir once. Bring the heat to low, cover the pan, and let it simmer for 15 minutes.

Step 4. Turn off the heat, stir the rice with a fork, cover the pan, and let it rest for 5 minutes.

Step 5. Transfer the rice to a plate and serve. Bon appetite!


3. Nigerian Coconut Rice Recipes

Ingredients:

  • 1 cup of rice
  • 1 can of coconut milk
  • 1 can of tomatoes, diced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 4 habanero peppers
  • 1 tsp of sea salt
  • 1 tsp of black pepper
  • ¼ cup of vegetable oil

Instructions:

Step 1. Cook the rice in boiling water for 10 to 15 minutes. And drain the rice from the water.

Step 2. Heat a pot or pan over medium heat and add the vegetable oil.

Step 3. Once the oil is hot, add the diced tomatoes, habanero pepper, and coconut milk. Season with the salt and cook for about 7 minutes or until boiling.

Step 4. After that, add the rice into the pot and stir. Cover the pot and cook for about 7 minutes or until the rice is almost dry.

Step 5. Next, add the diced bell peppers and let simmer until the rice is dry and there is no liquid.

Step 6. Turn off the heat and transfer the rice to a plate to serve. Happy eating!


4. Pineapple Coconut Rice Recipes

Ingredients:

  • 2 cups of rice
  • 400ml of light coconut milk
  • 1 cup of pineapple juice
  • 1 cup of chopped pineapple
  • 1 cup of water
  • 1/3 cup of shredded toasted coconut
  • ½ tsp of salt
  • 2 tbsp of cilantro, chopped

Instructions:

Step 1. Wash the rice and place it in the rice cooker. After that, add the coconut milk, water, pineapple juice, and salt.

Step 2. Cook until the rice is done.

Step 3. After that, add the pineapple chunks and shredded toasted coconut to the rice and stir until everything is well-combined.

Step 4. Transfer the rice to a plate and top with the cilantro. Serve and enjoy!
