Originally, kofta was made of potato and paneer. But nowadays there are plenty of kofta recipes that show you how to make it from meat.

These following kofta recipes will guide you on how to make kofta for vegan and if you are a meat-lover you can re-cook the Egyptian kofta recipes.

1. Veg Kofta Recipes

For Veg Kofta:

  • 1 big potato boiled mashed
  • 3/4 cup cauliflower florets
  • 1/2 cup diced carrots
  • 1/2 cup green peas
  • 1/2 cup corn
  • 2 green chilies finely chopped
  • a handful of coriander leaves finely chopped
  • 1-2 slice of bread
  • 2 tbsp of cornstarch
  • Oil for frying

Dry Spices:

  • 1/2 tbsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds powder
  • 1 tsp dry mango amchur powder
  • 1 tsp chaat masala
  • 1/2 tsp garam masala
  • Salt and pepper

For Curry: 

  • 2 tbsp oil
  • 1-inch piece ginger grated
  • 4 -5 cloves garlic finely chopped
  • 1 small onion finely chopped
  • 2 tomatoes pureed
  • 1 tbsp tomato paste
  • 1/2 cup cream

For Whole Spices:

  • 2 bay leaves
  • 2 cloves
  • 3-4 green cardamom
  • 1-inch cinnamon stick
  • 1 mace
  • 1 tsp cumin seeds
  • 1 tbsp dry fenugreek leaves


Preparing the Kofta:

Step 1. Grind the cauliflower, carrots, corn, and peas in a food processor until becomes smooth. Place the mixture in a bowl and add the mashed potato, green chili, coriander leaves, and all the dry spices. Mix it well.

Step 2. After that, sprinkle some water on the mixture along with cornstarch. Mix everything well until you can form a ball from the mixture.

Step 3. Make a small ball from the mixture and set it aside.

Step 4. Heat the oil in a frying pan and once it is getting hot, lower the heat and start to fry the kofta. Let it cook until all of the sides getting brown. Place it in a paper towel and set aside.

Making the Curry:

Step 1. Saute the bay leaves, cloves, cardamom, cinnamon, cumin seeds, and mace in a pan until it begins to get brown. Then, add the ginger, garlic, and onion. Keep sauteing until it gets brown.

Step 2. Once it is done, add the pureed tomato, salt, and turmeric and let it cook over the medium heat until the mixture gets thicken. Then, add the dry spice powder, coriander, cumin, chili, dry mango, and garam masala. Let it cook for about 2 minutes.

Step 3. After that, add a cup of water and tomato paste, let it cook for about 5 minutes. Place the crushed fenugreek on the mixture. Let it simmer for 5 minutes. Once it is done, lower the heat and add the cream slowly and keep stirring. 

Step 4. Once the curry boil, remove the heat and serve it warmly along with the kofta.

2. Lauki Kofta Recipes

For Kofta:

  • 1 Lauki
  • 1 tsp coriander powder
  • 1/2 tsp Pepper
  • Coriander leaves
  • 1/4 cup besan
  • Salt to taste
  • 1/2 tsp Turmeric
  • 1/2 tsp Kashmiri red chili powder
  • Oil for deep frying


  • 2 tsp Oil
  • 2 tsp Ghee
  • 1/2 tsp Cumin seeds
  • 3 Bay leaf
  • 1 tbsp Ginger garlic paste
  • 1 Cup Onion Finely Chopped
  • 1/2 tsp turmeric
  • 1 tsp Kashmiri red chili powder
  • 1 tsp coriander powder
  • 1 cup Tomato puree
  • 1 tsp Garam masala
  • 1 tbsp Cream
  • Salt
  • 1 tsp Coriander leaves


Preparing the Kofta:

Step 1. Peel and scrape the lauki. Then squeeze it well until getting the juice and set it aside for curry.

Step 2. Place the scraped like in a bowl and mix along with chili powder, coriander leaves, coriander powder, pepper, besan, and turmeric.

Step 3. Make a small ball from the mixture and deep-fried it in hot oil until getting golden brown over medium heat. Place it in a paper towel to remove the oil. Set aside.

Making the Curry:

Step 1. Heat the ghee and oil in a pan and when the oil getting hot, place the cumin and bay leaf over it. Saute the onion and salt on the pan for 3 minutes. Then, add the ginger and garlic paste and let it fried for a minute.

Step 2. Once it is done, saute the turmeric, chili powder, and tomato paste over it. To adjust the taste, add the coriander powder, garam masala, and salt on the mixture.

Step 3. After that, pour the lauki water and let boil. Once it is boil, add the cream and mix it well until becomes thicken. Then, add the prepared kofta and let it boil for 2 minutes more.

Step 4. Place the curry in a bowl and serve it warmly!

3. Chicken Kofta Recipes

The Kofta:

  • 350 g Minced Chicken
  • 50 g Chopped Onion
  • 2 Minced Garlic Cloves
  • 1/2 tbsp Grated Fresh Ginger
  • 1/2 tsp Kashmiri Chili Powder
  • 1 tbsp Dried Fenugreek Leaves
  • 1 tsp Ground Cumin
  • 1/2 tsp Coarse Sea Salt
  • 1 Egg Yolk
  • 1/3 Cup Breadcrumbs

For the Sauce:

  • 1/4 Cup Onion
  • 2 Garlic Cloves
  • 1/2 tbsp Ginger
  • 1 tbsp Ghee
  • 3/4 Cup Tomato Pasta
  • 1 tbsp Ground Coriander
  • 1 tsp Ground Cumin
  • 1 tsp Ground Turmeric
  • 1 tsp Kashmiri Chili Pepper
  • 1/2 tsp Ground Fenugreek
  • 1/3 cup Natural Yoghurt
  • 1/2 tsp Coarse Sea Salt
  • Pinch Sugar


Step 1. Mix all of the kofta ingredients in a bowl until it becomes inseparable and easy to form into a small ball. The mixture is for 10 small koftas, so it is around 50g for each ball. Set aside.

Step 2. Heat the ghee in a pan over high heat and add the roughly chopped onion. Let it cook for 5 minutes until it begins to get golden brown. Then, add the garlic and ginger on the pan and let it cook for a minute.

Step 3. Place the fried and sauce ingredients in a blender and let it be processed until getting smooth and well mixed. Then, pour the sauce in a pan and add the salt and sugar. Stir for a moment and add the kofta. Let it cook for 15 minutes with a closed lid over the low medium heat.

Step 4. Voila, your delightful chicken kofta is ready to serve!

4. Egyptian Kofta Recipes

  • 16 oz ground beef
  • 1 onion
  • 1 bunch of parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder


Step 1. Preheat the oven until it reaches 350 °F and places a pan lined with parchment paper.

Step 2. While waiting for the oven to reach the hat, grind the onion, salt, pepper, parsley, and garlic powder in a food processor until completely minced. Then, add the ground beef into the food processor and continue to grind until everything is mixed evenly.

Step 3. After that, form 20 small meatballs from the mixture and place it on the prepared baking pan. Let it bake for about 25 minutes.

Step 4. Once it is baked, remove from the oven and serve it with bread.
