Ingredients:

For the Crust

  • 1 1/4 cups all-purpose flour, plus more for dusting
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon salt
  • 1 stick cold unsalted butter, cut into 1/2-inch cubes
  • 1 tablespoon apple cider vinegar
  • 1/4 cup ice water, plus more if needed

For the Crumb Topping

  • 1 cup all-purpose flour
  • 1/3 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature

For the Filling

  • 3 pounds mixed apples, peeled and sliced 1/4 inch thick
  • 4 tablespoons unsalted butter, melted
  • 1/3 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt

Instructions:

  1. Create the crust: Stir in a large bowl the flour, granulated sugar, and salt. Use your fingers to rub the butter pieces into the flour until pieces of pea-size appear. Drizzle in the vinegar and ice water; stir gently and mix with a fork.
  2. If the dough doesn't stay together as you pinch it, add 1 tablespoon of ice water at a time, add more. Turn the dough out onto a sheet of plastic wrap and mold into a disc; tightly wrap it. Refrigerate for 1 hour or overnight until firm.
  3. Stretch the dough out into a 13-inch circle on a lightly floured board. Ease into a pie plate measuring 9 inches. Trim the edges, leave an overhang of 1 inch, then tuck the overhanging dough under it; crimp the corners with a fork. Refrigerate for 1 hour or overnight, until firm.
  4. Meanwhile, to make the crumb topping: In a medium dish, combine the flour, brown sugar, cinnamon, and salt. Mix the butter with your fingers until no longer floury and crumbs form. Freeze until ready to use.
  5. Make the filling: put on the lowest oven rack a foil-lined baking sheet; preheat to 400. In a big bowl, add the apples, melted butter, both sugars, flour, lemon juice, cinnamon, and salt. Spoon the filling onto the crust of a chilled pie. Pat the crumb mixture on the top.
  6. Bake the pie for about 30 minutes on the hot baking sheet until it browned. Reduce the oven temperature to 350 and bake for another 60 to 80 minutes, until the apples are completely soft when pierced with a paring knife. 
  7. Move the pie to the rack to cool completely.

  • 6 eaches apples - peeled, cored, and sliced
  • 2 tablespoons white sugar
  • ½ teaspoon ground cinnamon
  • 1 cup brown sugar
  • ¾ cup old-fashioned oats
  • ¾ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ cup cold butter

  1. Preheat oven to 3175 degrees C.

  • 1/3 cup light brown sugar
