Bhatura is a perfect companion to chickpea curry or chole, and the best way to enjoy bhatura is by dipping it to the curry sauce. There are different variations of bhatura recipe, and in this article, you will find four different variations of bhatura recipe that you can make at home.

1. Instant Bhatura Recipe

Ingredients:

  • 2 ½ cups of maida or all-purpose flour
  • ½ cup of semolina
  • 1 cup of soda water
  • 1 tbsp of oil
  • 1 tsp of sugar
  • ½ tsp of salt
  • Oil for deep frying, as needed

Instructions:

Step 1. In a large mixing bowl, add the maida or all-purpose flour, semolina, sugar, salt, and 1 tablespoon of oil.

Step 2. Mix well until well combined. After that, add the soda water and mix. Knead the dough until smooth. You can also add more soda water as needed.

Step 3. Cover the dough with a damp kitchen towel and let sit for 30 minutes. After that, slightly knead the dough and divide the dough into small balls.

Step 4. Flatten the dough ball and roll with a rolling pin. Roll the dough into circles and dust with flour as needed. Do the same with the rest of the dough.

Step 5. Heat the oil on a frying pan over high heat. Once the oil is hot deep fry the bhatura and press with a spatula or spoon. Splash some oil on top of the bhatura.

Step 6. Flip over the bhatura and cook until golden brown. Take out from the oil and drain on a rack or paper towel to remove the excess oil.

Step 7. Transfer to a plate and serve!

2. Bhatura Recipe With Yeast

Ingredients:

  • 2 cups of maida or all-purpose flour
  • 2 tsp of dry yeast
  • 1 ½ tsp of sugar
  • 2 tbsp of curd
  • 1 tbsp of ghee, melted
  • ¾ cup of warm water
  • Salt to taste
  • Oil for deep frying as needed

Instructions:

Step 1. In a small bowl, combine the sugar, dry yeast, and warm water. Stir until the sugar and yeast are dissolved and let sit for 5 to 7 minutes.

Step 2. After that, combine the yeast and sugar mixture with the flour, ghee, curd, and salt in a large mixing bowl. Stir and knead the dough until soft or for about 6 to 7 minutes.

Step 3. Cover the dough with a damp cloth and let sit for about 30 minutes.

Step 4. Next, divide the dough into 12 small balls and roll each ball to a circle shape using a rolling pin. Slightly dust with flour as needed.

Step 5. Heat the oil in a frying pan over high heat. Once the oil is hot, fry the bhatura until golden brown on both sides. Drain the oil by placing the bhatura on a rack or paper towel to remove the excess oil.

Step 6. Serve on a plate. Enjoy!

3. Bhatura Recipe Without Yeast

Ingredients:

  • 4 cups of maida or all-purpose flour
  • ½ cup of semolina
  • ½ cup of yogurt
  • ½ tsp of baking soda
  • ¾ tsp of baking powder
  • 6 tbsp of warm water
  • 1 tbsp of oil
  • 1 tsp of sugar
  • 1 tsp of salt
  • Oil for deep frying

Instructions:

Step 1. In a large mixing bowl, add the flour, semolina, salt, baking powder, baking soda, and sugar. Mix well.

Step 2. Add the yogurt and oil. Mix well until well-combined. 

Step 3. Knead the dough while also adding the water little by little as required. Knead until smooth or for about 10 to 15 minutes.

Step 4. Cover the dough with a damp cloth and let sit for 2 to 3 hours.

Step 5. Divide the dough fairly and form it into small balls. Roll the dough using a rolling pin to form a circle.

Step 6. Heat the oil in a frying pan over high heat. Once the oil is hot, fry the bhatura until both sides are golden brown. Drain the bhatura on a rack or paper towel to remove the excess oil.

Step 7. Transfer on a plate and dig in!

4. Bhatura Recipe By Sanjeev Kapoor

Ingredients:

  • 2 ½ cups of maida or refined flour
  • ½ cup of yogurt
  • ½ tsp of baking powder
  • 2 tsp of sugar
  • 1 tsp of salt
  • 2 tbsp of oil
  • A pinch of soda bicarbonate
  • Oil for deep frying

Instructions:

Step 1. In a bowl, combine the maida or refined flour, salt, soda bicarbonate, and baking powder. Mix well.

Step 2. Add the yogurt, sugar, and water to the flour mixture. Mix well and knead the dough until smooth.

Step 3. Drizzle the dough with two tablespoons of oil and spread evenly. Cover the dough with a damp cloth and let sit for 10 minutes.

Step 4. Divide the dough into even portion and form them into small balls. Roll out the dough ball using a rolling pin to make a circle.

Step 5. Heat the oil in the frying pan over high heat. Once the oil is hot, fry the bhatura until both sides are golden brown.

Step 6. Take out from the oil and rain the bhatura on a rack or paper towel to remove the excess oil.

Step 7. Transfer to a plate and serve. Happy eating!
