- 20-25 Curry Leaves
- 2 tsp Coriander Powder
- 1/2 tsp Turmeric Powder
- 3 tsp Kashmiri Red Chilli Powder
- 1/2 tsp Black Pepper Powder
- 1/2 tsp Garam Masala Powder
- 6 Boiled Eggs
Step 1. This is another favorite egg curry recipe to do. Firstly, heat oil in a pan. Then, add mustard seeds and fennel seeds. Cook until they crackle. It takes a few minutes.
Step 2. Add in onions, 1/2 tsp of salt, and cook until the onions smell come out. Next, add in the tomatoes, ginger, garlic, and curry leaves. Cook until the tomatoes are mushy. It takes about 3-4 minutes.
Step 3. Add in the turmeric powder, coriander powder, red chili powder, black pepper powder, and garam masala powder. Cook them for a minute.
Step 4. Now, add in a cup of water and salt. Then, cover the pan and wait for 3-4 minutes until cooked.

- 2 Tbsp Oil
- 1/ 2 Tsp Kashmiri Red Chilli Powder
- 1/4 Tsp Turmeric / Haldi
- 1/4 Tsp Salt
For the curry
- 6-8 Eggs
- 4 Tbsp Oil
- 2 cups Finely Chopped Onions
- 5 Green Chillies
- 2 Tbsp Ginger & Garlic Paste
- 2 Inch Cinnamon / Dal Chinni
- 4 Green Cardamon / Elaichi
- 5 Cloves / Long
- 1.5 Tsp Cumin Seeds / Jeera
- 2 Tsp Salt
- 1/2 Tsp Turmeric / Haldi
- 1.5 Tsp Garam Masala
- 2 Tsp Coriander / Dhaniya Powder
- 3 Tsp Kashmiri Red Chilli Powder
- 3 Large Finely Chopped Tomatoes
- 2 Tbsp Cilantro
Step 1. Start from the eggs seasoning, heat oil in a pan. Then, add in salt, turmeric, and red chili powder.
Step 2. Use a toothpick to poke the boiled eggs to make it soak the seasonings. Now, add in the eggs to the pan and for a few minutes. When the eggs are coated by the seasoning, turn off the heat and set aside.
Step 3. Now, we move to the curry. Start by heating oil in a pan with medium to high heat. Then, add in the cloves, green cardamom, and cumin seeds. Then, add in the onions and saute until it turns golden. Add in garlic paste and ginger too. Cook until the garlic's smell disappears.
Step 4. Still with the pan, add in slit green chilies, coriander powder, Kashmiri Lal Mirch, turmeric, and salt. Mix them all until well-combined.
Step 5. Now, add in tomatoes and stir. It takes about 4-5 minutes to wait for the tomatoes cooked.
Step 6. Add in water and stir again. Cover the pan and cook for 3-5 minutes with medium heat. Uncover and add in the Masala and mix well.
Step 7. Now, add in the seasoned eggs and cilantro. Cover the pan and cook for 4 minutes more on medium heat.
Step 8. Uncover the pan, stir, and move the curry to a dish. Serve it with plain rice or chapati. Enjoy!

- 4 boiled eggs
- 1 cup blanched cauliflower
- 4 boiled potatoes
- 1 cup chopped onion
- 1 tbsp ginger & garlic paste
- To taste salt & sugar
- 3/4 tbsp oil
- 1/2 cup tomato paste
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 2/3 green cardamom
- 4/5 nos cloves
- 1 Cinnamon
- 1/2 tsp cumin seeds
- 1 tsp chopped coriander leaves
Step 1. Start this egg curry recipe by mixing the boiled potatoes, eggs, little salt, and turmeric powder. Then, heat some oil to fry the potatoes and eggs. Next, add in cloves, cumin seeds, cinnamon, and green cardamom. Fry for 1/2 seconds.
Step 2. Add in the chopped onion, a little salt, turmeric powder, and fry again.
Step 3. Add in tomato paste and cook for 2-3 minutes. After that, add in the ginger, garlic paste, and mix well.
Step 4. Now, pour in all the masala and little water. Stir it. Add in the blanched cauliflower (with salt and turmeric powder). Mix and cook for 3-4 minutes.
Step 5. Again, add in the fried potatoes and cook for 2 minutes. Add water and mix for about 3-4 minutes.
Step 6. Add in fried eggs, salt, and sugar as desired. Stir and cook for 4-5 minutes. Add in garam masala, stir well, and turn off the heat.
