You just need less than 5 ingredients to make the ultimate meringue. All of them are easy to find in your kitchen or nearest stores from your home. Here the ingredients and the steps for meringue recipes.


  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup sugar


Step 1. Remove eggs from the refrigerator to reach the normal room temperature. This aims to make the eggs whip to the fullest.

Step 2. Heat your oven to 350 degrees or 110C/100 fan

Step 3. Place 4 large eggs into a large and clean mixing bowl, do not use a plastic-based bowl.

Step 4. Whip the egg white until glossy and smooth. You can also use an electric hand whisk and set on medium speed. Make sure the mixture looks like a fluffy cloud and will stand up in stiff peaks when you lift the blades.

Step 5. If you use an electric hand whisk, turn the speed and add 115g sugar to egg whites, approximately a tablespoon at a time. Continue to beat for 3-4 seconds. You should add sugar slowly to prevent the meringue from weeping water. 

Step 6. You can add 115g icing sugar if you need and gently fold it in with the spatula. Do not over mix to keep the texture.

Step 7. Prepare pre-baked or no-bake dessert and spread meringue on the top. Then bake meringue for approximately 10 minutes until it looks golden. Do not put meringue too close to heat, place them about 4 inches.

Lemon Meringue Pie Recipes

If you are not enough with basic meringue recipes, you can try the lemon meringue recipes to fill your pie. Here are the ingredients and steps you need to follow:


  • Pie Crust

For the lemon filling:

  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1.5 cups water
  • 1/2 cup fresh lemon juice
  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 5 large egg yolks
  • 1 tablespoon lemon zest
  • For the Meringue:
  • 5 large egg whites
  • 1/2 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1/8 teaspoon salt


Step 1. Preheat oven to 175 C and prepare the pie dough and blind bake your pie crust in a 9-inch pie dish 

Step 2. Make the lemon filling by whisking a cup of sugar, flour, cornstarch, and salt together in a saucepan. Stir them in water, lemon juice, and lemon zest.

Step 3. Cook them in medium heat and add butter, then stir frequently until they begin to thickening and bubbling. It takes about 6 minutes. Once you have done, reduce heat to low

Step 4. Whisk egg yolks and add hot sugar gradually. Then in a slow stream, pour the egg yolk mixture into saucepan. Cook them in medium heat until the mixture thick and big bubbles begin to appear. It will take 3 up to 4 minutes.

Step 5. Once you finish, remove the heat and wait for several minutes to pour filling into baked pastry

Step 6. Make the meringue. Use a handheld or stand mixer with a whisk to beat the egg whites and cream of tartar.  You can add ½ teaspoon of vanilla extract if needed. Beating the egg whites at low speed and gradually increase to medium speed until the mixture look foamy.

Step 7. Add sugar gradually to the mixture and whip until it forms stiff peaks. Avoid over-beat to prevent the meringue from grainy.

Step 8. Spread meringue on top of filling using a rubber spatula. Ensure you spread all to the edges until touches the crust and no gaps.

Step 9. Fill the center of the pie with more meringue mixture. You can use the back of a spoon to create peaks over the meringue.

Step 10. Bake the pie in preheat over approximately 20- 35 minutes. Wait until the meringue turns to golden.

Tips for No-Fail Meringue Recipes

1. The bowl and beater you used for beating meringue should be grease and moisture-free

2. Do not crack the eggs in the place where you want to separate the whites. A small yolk will ruin your meringues

3. When adding sugar, do it gradually. Make sure you add a teaspoon at a time and let them dissolve first

4. Never stop beating until you get stiff peaks. But when you already hit the stiff peaks, stop it.
